Pear and Cinnamon Cake


I'm glad I still able to bake something to support Cook Like A Star hosted by Zoe of Bake for Happy Kids after back from holidays. This cooking and baking event last till end of December and I have bookmarked few recipes to try.



This Pear and Cinnamon cake of Bill Granger is highly recommended by Mich, Piece of Cake. She is right this easy cake is light, moist and crumbly. The low content of butter used in the recipe make this cake perfect for everyday desserts.

Pear and Cinnamon Cake (8 inch)
Recipe by Bill Granger
Reference from Mich, Piece of Cake with minor modification
Ingredients:
(A)
75g butter, softened
100g soft light brown sugar (original used dark brown sugar)
1 teaspoon ground cinnamon
2 eggs, lightly beaten

(B)
175g cake flour
1 teaspoon baking powder
1/8 teaspoon baking soda
*original used 175g self-raising flour (omit baking powder and baking soda if using SR flour)
120g yogurt (original used 80ml milk)
50g walnuts, roughly chopped

1 pear, peeled and cut into wedges
1 tablespoon honey

Methods:
1. Preheat the oven to 180C/350F/Gas4. Beat the butter, sugar and cinnamon with electric beaters until pale and creamy. Gradually beat in the eggs.

2. Tip in the flour, yogurt (or milk) and most of the walnuts and mix until combined. Pour the batter into a greased and lined 20cm cake tin, and arrange the pears over the top with the remaining walnuts.


3. Bake for 30 to 35 minutes or until a skewer inserted into the centre comes out clean. Leave in the tin for 5 minutes before removing. Brush the cake with a little honey before serving warm.

    I'm glad that you like Bill Granger event and this recipe too! Bill is not as popular as big names like Jamie Oliver and Nigella Lawson but he surprises me with lots of fantastic recipes too.
