A friend shares her way of prepare raw salad at home. The main ingredient in seasoning is lemon juice. I was surprise with the simple seasoning raw salad can turn out so good. Hope you give this recipe a try!

Carrot and Cucumber Salad
1 medium size carrot, shredded
1 medium size cucumber, remove seeds and shredded
Few stalks coriander leaves, bite length size
1 big red chili, deseeded , thinly sliced
Handful of ground peanuts, lightly crushed
1 tablespoon sesame seeds
2-3 tablespoons lemon juice (from ½ lemon)
2-3 bird chilies, thinly sliced (more if prefer more heat)
2-3 teaspoons light brown sugar
½ teaspoon salt
2-3 tablespoons olive oil (can substitute with sesame oil)
*Mix all together till sugar dissolve and set aside
1. Place all vegetables in a mixing bowl. Add in the lemon juice mixture. Toss all ingredients together in mixing bowl evenly. The salad is ready to be served!
