Vegetarian Soya bean Paste Pumpkin

 
This is another vegetarian dishes I have try with pumpkin. Phong Hong is right the soya bean paste (tauchew) pair really well with pumpkin. For more nutritious meal I added some tofu into this dish.



Vegetarian Soya bean Paste Pumpkin
Ingredients:
(A)
250g pumpkin, cut into 1cm thick
1 firm tofu, sliced and pan fried till golden brown
1 big chili, deseeded and cut into length size

(B)
1 tablespoon course soya bean (tauchew)
1 bird chili
*pound till fine and this will be soya bean chili paste

1 tablespoon oil
100ml water
½ teaspoon light brown sugar
¼ teaspoon salt
½ teaspoon light soya sauce

Methods:
1. Heat oil in wok. Add in soya bean chili paste and cook till fragrant.

2. Add in pumpkin, fried tofu slices, water and all the seasoning. Bring to boil and taste the seasoning.

3. Cover with lid and continue cook until pumpkin turn tender.
