Recently I am craving for butter cake. After looking at my butter cake collection I saw this condensed milk pound cake. I'm sure most of you are very familiar with it :) I'm adding mixture of cocoa and coffee batter in between the plain batter. It is not only pretty but nice to eat as having two flavour at the same time.
I’m using steam bake as recommended by Jane who used to bake her butter cake. I like the result of the cake. It really creates moist and lighter texture. When the last time you bake this condensed milk pound cake? It is time to bake and enjoy!
Ingredients:
(A)
125g butter
20g castor sugar
(B)
120g condensed milk
1 tsp vanilla extract
120g cake flour
1 tsp baking powder
(C)
2 eggs
(D) cocoa mixture
10g cocoa powder
1/2 tsp instant coffee powder
1-2 tbsp hot water
* mix well and set aside
(A)

10g cocoa powder
1/2 tsp instant coffee powder
1-2 tbsp hot water
* mix well and set aside
Methods:
1. With the electric mixer beat butter and sugar till light and fluffy.
2. Add in vanilla extract and condensed milk. Beat till well combined.
3. Add in the sifted flour and baking powder. Beat at low speed till incorporate.
4. Put in eggs, one at a time and beat till well combined.
5. Spoon 3-4 tablespoons batter into cocoa mixture. Stir till well mixed.
6. Assemble by layering the base with plain batter. Follow by cocoa batter. Repeat the layering with plain batter on the top. Make the pattern as you like (optional).
7. Fill a pan with some boiling water and place at the bottom of oven. Bake the cake at middle rack in preheated oven at 180C for 25 minutes (steam bake). Remove the water and bake at lower temperature 150C for further 15 minutes or till cooked.
