Banana Oatmeal Cake(Banana Oatmeal Quick Bread)

I have been bookmarked this recipe the very first time I read it. If you used to follow my blog you know I used to reduce the amount of sugar and oil. But today is the other way round increase the oil :p  Because Lena version of banana quick bread is without adding any oil! She replaced the oil with yogurt. The original recipe only required 3 teaspoons of oil. Well just feel like adding a bit more. Adding 30ml oil for whole banana oatmeal cake not much right? ^^
 
I agreed with Lena adding the egg whites (after whip) make the cake moist although without or little oil.
 
Now I like to cut my cake....

Adapted and slightly modified from Frozen Wing
I’m using L23cm x W13cm x H8cm cake pan
Ingredients:
(A)
3 large ripe bananas (I used 7 medium size )
3 tsp canola or walnut oil (I used 30ml vegetable oil)
1 large egg, beaten
70g brown sugar
 
(B)
156g cake flour
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
* sift above and set aside
1 cup rolled oats
 
(C)
2 egg whites
 
 
Methods:
1. In a bowl, mash the bananas, add oil , whole egg and sugar. Whisk to mix.
 
2. Add in the dry ingredients from (B) and mix well. Batter will be fairly thick.
 
3. In another bowl, using an electric hand mixer, beat the egg whites till medium stiff peak. Fold the egg whites into the batter in 3 additions.
 
4. Pour batter into pan and bake for 40-45 minutes until the cake is cooked thoroughly. Remove from oven and let cool for 5 minutes. Remove the cake from pan and cool on a wire rack.

  7. i enjoyed eating this a lot. Although it's not as soft as the usual banana bread, i find that it's moist enough to make it a delicious healthy loaf !
