Every mid year my sons' school will have Parents/Teacher Conference. This time I bring along this chocolate banana, pumpkin cake and pandan kaya buns for the school teachers and staffs. I will share on the pandan kaya buns next time.
I am submitting this post for this month Aspiring Bakers #7 – Chocolate Delight (May 2011) hosted by DG from Tested and Tasted.
Adapted and slightly modified from Joys of Baking, Chocolate Banana Bread
Ingredients :
(A)
2g instant coffee (Nescafe)
2 tsp warm water
3 mashed banana (about 200g)
100g mashed pumpkin
2 eggs
110ml vegetable oil
(B)
3/4 cup sugar
230g plain flour
30g cocoa powder
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
* sift and set aside
(C) Topping
1/4 cup chocolate chips
Methods:
1. In a bowl dissolve instant coffee with the warm water. Then, add in the rest of ingredients (A). Stir to mix.
2. In another bowl, combine sugar and sifted dry ingredients. Pour all into step (1) and stir to well incorporate. Do not over mix.
3. Pour the batter into lined and greased 8" square pan. Sprinkle the chocolate chips evenly on top. Bake in preheated oven 180C for 30 minutes.
4. Once cooked, remove from pan and leave to cool on wired rack.

ReplyDeleteI had reduce the sugar and taste just nice. Just enough to cover the bitterness of cocoa n coffee powder.
