Chocolate Banana Cake Tarts

These cake tarts are inspired by Nasi Lemak Lover, Butter cake tarts. Since I am making chocolate filling I add some cocoa powder inside the tart pastry as well.


Well it seems hard to locate the pastry from the cake :P Anyway, these tarts are lovely, my kids like it!

Ingredients: yield about 27g x 6pcs (7 1/2” tart mould)
~ Pastry
45g butter
25g icing sugar
1 yolk
Pinch of salt

90g cake flour
5g cocoa powder
* Sift and set aside

~ Cake batter
(A)
100g mashed banana
1 egg
30g vegetable oil
40g light brown sugar
1/4 tsp salt

(B)
80g plain flour
10g cocoa powder
1/2 tsp baking powder
1/4 tsp baking soda
* Sift and set aside

(C)
Some chocolate chips for topping


Methods:
~Pastry
1. Beat butter till creamy. Add in icing sugar and continue beat till well combine.

2. Add in yolk and salt. Mix till well incorporate.

3. Fold in sifted flour in 2 batches. Do not over mix.

4. Cover the dough with cling wrap and keep in fridge for 30 minutes.

5. Remove the dough from fridge. Divide into 6 portions (about 27g each).

6. Shape into balls. Place each ball into the tart mould and press to spread the dough around. Keep in the fridge to set.

7. Meanwhile prepare the cake batter.

~ Cake batter
1. Add in all ingredients (A) in a mixing bowl. Stir to well combine.

2. Fold in sifted dry ingredients (B) and mix till well incorporate. Do not overmix.

~ Assemble
1. Take out the tart pastry from fridge. Spoon cake batter into tart about 90% full. Sprikle some chocolate chips.

2. Bake in preheated oven 180C for 20-23 minutes.

3. Remove from the mould and leave to cool on wire rack.  

Balance of cake batter. Make it into muffin :)

  2. If you made a yellow tart case with a choc cake filling or vice versa, hmmm.. then maybe it'll look obviously different.
