Double Chocolate Muffins (Mixing Method)

I have been busy with orders of pineapple rolls for the upcoming Chinese New Year. And I am craving for some chocolate bakes. The 1st thing come in mind is muffins. I found this when I looking for easy to prepare chocolate muffin recipe. When I mentioned easy prepare means mixing dry into wet ingredients. The extra step for these muffins is melting the chocolate which I don’t mind.



This double chocolate muffins texture is moist and tender with rich chocolaty flavour. I reduced the usage of baking powder and baking soda as feel too much with the amount of flour used in the recipe. I reduced the sugar too as I'm using semi-sweet chocolate instead of dark chocolate. I’m kind of regret reducing too much sugar. Next time will increase another 10g of sugar.

Recipe for double chocolate muffins
Recipe adapted from shazkitchen with modification
Double Chocolate Muffins (yield 10 pieces)
Ingredients:
(A)
85g unsalted butter
110g semi-sweet chocolate

(B)
280g all-purpose flour
1/3 cup unsweetened cocoa powder
1½ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
45g sugar (will increase to 55g. More if you prefer sweeter)

(C)
1¼ cups milk, at room temperature
1 egg, at room temperature
1 tablespoon vanilla extract

(D)
½ cup chocolate chips (keep handful for topping)

Method:

1. With double boiler method, melt together butter and chocolate. Leave aside to cool.


2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda and salt. Add in sugar and whisk to combine.

3. In another bowl, whisk together milk, egg and vanilla extract. Add the mixture of melted chocolate and butter, whisk well.

4. Add in the dry ingredients and fold to combine with a spatula. Lastly add in the chocolate chips. Take care not to overmix.


5. Fill muffin cups equally with the batter. Sprinkle the top with chocolate chips. Bake in preheated oven at 180C for about 15-18mins, till inserted skewer comes out clean. Transfer to wire rack to cool completely before serve.
