Turkish Pizza

Turkish pizza (lahmacun) is a round, thin piece of dough topped with minced meat (most commonly beef and lamb) and minced vegetables and herbs including onions, tomatoes and parsley, then baked. Lahmacun is often served sprinkled with lemon juice and wrapped around vegetables, including pickles, tomatoes, peppers, onions, lettuce, and roasted eggplant.

Pizza with Pumpkin Dough/ Straight Dough Method - Pumpkin # 7

This pizza is special as I using pumpkin as part of the pizza dough. To make the pizza making easy I use plain flour. With the help of yeast and baking powder the pizza dough turns out great! So don’t worry about the hard kneading time and long proving time. Do try!

Ingredients: yields 9” thin pizza
(A)
180g plain flour
½ tsp yeast
½ tsp baking powder
1 tbsp sugar
¼ tsp salt

80g pumpkin puree
30ml water


(B) Topping
Spaghetti sauce for spreading
Mozzarella and cheddar cheese
Onion, shredded pumpkin, pineapple (diced), sausage and crabstick.
*Or any topping you like.


Methods:
1. Mix all ingredients and knead to form pliable dough. Cover and leave to rest for 10 minutes.

2. Transfer to working surface. Roll out the dough into 9” disc shape. Transfer to greased pizza pan. Brush the surface with some oil. Prick some holes with fork to prevent dough puff during the baking process.

3. Bake in preheated oven 200C for 10 minutes. Remove from oven and start topping by spreading spaghetti sauce, cheeses and the rest of the topping ingredients.


4. Send back into oven and bake for further 10-15 minutes or until the cheese topping turn golden brown. Serve while it is warm. Enjoy!

Focaccia Sandwich/ Straight Dough Method

I read this focaccia sandwich from Kitchen Corner. I like the idea of baking focaccia with topping! This seems another way of having savoury bread in pizza way. Do drop by her blog for the yummy topping recipe!

Adapted from 孟老师的 100 types bread cookbook
Ingredients: yield about 650g dough
(A)
300g bread flour
10g sugar
½ tsp salt
1 tsp yeast

(B)
170ml water

(C )
10g vegetable oil/ olive oil
 
 
(D) Filling and topping
Ham and cheddar cheese for filling
Some salt and pepper

2 tbsp mayo sauce
Some salt and pepper for seasoning
50g mixed vegetables (I used sweet corn, carrots, onion)
1 sausage (diced)
* Mixed and set aside

Methods:
1. Put all ingredients (A) into a bowl and stir to mix. Add (B) and knead to form dough.

2. Add oil and continue kneading to form smooth and elastic dough. Cover and let it prove for 1 hour.
 
 
3. Transfer to working surface. Slightly knead to remove excess bubbles. Divide into two portions and shape into balls. Leave to rest for 10 minutes.


4. Flatten the balls into rectangle shape. Layer the ham slice and cheese on one of the roll out dough. Place another roll out dough on top and seal the edge tightly. Brush the surface with some oil. Cut some holes with a pair of scissors. Sprinkle some salt and pepper on top. Leave to prove for 20 minutes.  
 
5. Bake at 190C for 10 minutes. Remove from the oven. Place the topping mixture on the half cooked bread. Return back to oven and bake further 10-12 minutes.

6. Remove from the pan and leave to cool on wired rack. Enjoy!

Pizza with Tuna Topping

Pizza is one of my family favourite especially my kids. Pizza is very versatile as we can top the pizza with anything that we like. This time I’m using tuna which is easy available in can.

Besides the main course, I prepare some mini dessert pizza with cheese and chocolate topping.


I like to send this post for this month Aspiring Bakers #6: Say Cheese! (April 2011) hosted by Noms I Must.

Ingredients:
(A)
300g Bread flour
1/2 tsp yeast
1 tbsp sugar
¼ tsp salt
1 egg
110-120ml water

1 tbsp vegetable oil

(B) Topping
Spaghetti sauce for spreading
Mozzarella, cheddar and parmesan cheese
Tuna in can (flavour of your choice)
Onion, carrot, cherry tomatoes, green bean
* slice the vegetables thinly. Or use any vegetable of your choice.



Methods:
1. Mix all ingredients except oil to form dough. Add in the oil and continue kneading to form smooth and elastic dough. Cover and rest for 45 minutes.
2. Transfer to working surface. Slightly press down to remove the air. Shape into round and rest for 10 minutes.
3. Roll out the dough into 9” disc shape. Transfer to greased pizza pan. Prick some holes with fork to prevent dough puff during the baking process.




4. Start topping by spreading spaghetti sauce, cheeses and the rest of the topping ingredients.
5. Bake at 200C for 12 minutes or until the pizza base is cooked. Turn the oven function to grill and bake another 3-5 minutes or until the cheese topping turn golden brown. Serve while it is warm. Enjoy!
