I
have some black sesame seeds sitting in the kitchen counter for quite long.
Since I have some red bean paste filling on hand I decide to make this black
sesame steamed buns. Although it is straight dough method it still produce
great result with the used of baking powder. These buns are best to serve warm.
Reference from 阿芳的3杯面粉 cookbook
Ingredient: yield about 50g X 11 pcs
2 cups all-purpose flour
1 cup low protein flour
1 cup low protein flour
10g black sesame seeds
* Blend till fine
1 tsp yeast
2 tsp baking powder
2 tbsp castor sugar
180ml water
1 tsp yeast

1 tbsp oil
~ Filling

(divide into 30g each and shape into round. Keep in fridge for later used)

Method:
1. Put all ingredients except oil into kneading bowl. Knead till all well incorporate. Add in oil and continue knead till form pliable dough.
2. Cover the dough and rest for 1 hour or double in size. Transfer the dough to working surface. Slightly knead to remove air bubbles.
3. Divide the dough into 50g each. Shape into balls and keep aside for 10 minutes. Roll out into round and wrap in the filling. Seal and put on greased paper. Place inside steamer and leave to rest for 15-20 minutes.
4. Bring the water to boiled. Steam at medium heat for 8-10 minutes.
I am not good at wrapping the filling into buns/paos, will leak out. :( Vivian, do you have any tips or videos or pictures that will be helpful?
