Sweet Potatoes in Lemongrass Soup

I used to cook sweet potatoes as dessert. Cooking with lemongrass is my 1st time. If you like lemongrass then you will like this dessert. I like and really enjoy it especially having it warm. I definitely will cook my sweet potatoes in lemongrass soup in future.

According to the author cooking lemongrass with sweet potatoes in soup can expel wind in the body and ease constipation. Do try and enjoy a bowl of refreshing dessert :)


Adapted and slightly modified from Easy-made Dessert cookbook
Ingredients:
2 sweet potatoes (about 450g)
3 spring lemon grass
6 slices ginger
1½ slabs brown sugar (replaced with 100g gula melaka)

Methods:
1. Peel sweet potatoes. Rinse and cut into pieces. Rinse and cut lemongrass into section.

2. Bring 4 cups of water to boil. Add sweet potatoes and ginger slices. Cook for 20 minutes or till soft. Put in lemongrass and brown sugar. Cook for 10 minutes. Serve.
