My
kids used to eat homemade loaf sandwich with butter and kaya. Lately they
request savoury sandwich for change. The easiest way is use store bought tuna spread,
ham or other similar canned food. I was thinking what to make to replace those
processed food.
I
may not able to make ham but I can make burger patties and chicken nuggets.
This recipe is inspired by JOC, chicken meatballs. With the same recipe it can
be used in making chicken patties and chicken nuggets. Earlier I posted chicken nuggets which meat mixture is being steamed, divided, coated breadcrumb
and fried. I found this version is simple and the nuggets texture is better, firmer
and has meaty bites feel.

Chicken Nuggets and Chicken Patties
Ingredients:
500g
ground chicken (used chicken breast)
2
pieces firm tofu (about 300g, mashed)
3-4
tablespoons instant oats (can replace with breadcrumbs)
1
egg
2
inch ginger (grate)
1
teaspoon salt
1
teaspoon pepper
Oil
for cooking
Methods:
1.
In a large bowl, combine ground chicken, mashed tofu, instant oats, egg and all
the seasoning. Mix in one direction until
well combined and sticky.

For chicken patties, divide into manageable portions. Shape into ball and place
on a plastic sheet. Press the ball to the thickness that you like. Chill in
fridge for an hour to set.

mixture is very sticky so it is easier to shape on plastic sheet.
3.
For chicken nuggets, the mixture is ready to be pan fried.
4.
Heat up a non-stick pan. Place the patties and cook over medium heat till
cooked. For chicken nuggets using two spoons, make a small ball and drop the
meatballs. Flatten the meatballs with back of spoon. When the bottom is nicely
browned, flip them over and cover with the lid to cook through.
