Anchovies with Rolled Oats and Basil (九层塔)

Another savoury dish with rolled oats, this time is using anchovies. I used to cook anchovies with shallots in spicy sauce. Being inspired from Rolled Oats Prawn I add rolled oats into this dish as well. The oats gave lightly crispy and chewy texture to this dish. If you want some quick dish, do give this dish a try!

Anchovies with Rolled Oats and Basil (九层塔)
Ingredients:
(A)
¼ cup rolled oats
1 tablespoon oil for cooking
¼ cup anchovies
5 pieces shallots, thinly sliced

(B)
1 small chili (chili padi), thinly sliced
½ big chili, sliced
½ teaspoon sugar
½ teaspoon soya sauce
½ teaspoon chili sauce
1-2 tablespoons water
Few stalks of basil leaves

Methods:
1. Put rolled oats inside wok. Without adding any oil pan fry the oats till fragrant and lightly brown. Dish out and set aside.

2. Heat up wok, add in vegetable oil. Add in anchovies and fry till golden brown. Dish out and set aside.

3. With the remaining oil inside wok, add in sliced shallots and fry till fragrant. Then add in chilies, sugar, soya sauce, chili sauce and 1 tablespoon of water. Stir to mix.

4. Return browned anchovies and ¾ of oats back into wok. Stir to coat well. Add in another tablespoon of water if too dry. Taste seasoning.

5. Lastly add in remain ¼ oats and basil leaves. Quickly stir to mix and serve.

  2. Viv , this dish sounds interesting ! I never knew that you can use oats in savory dishes :D I'm sure it tastes as delicious as it looks !

  4. Very special oats recipe !! My family didn't consume oats, I bought some the other day when my son was in sick..still left some oats, let me think I can use it to cook something..
